Tiramisu Day

Two weeks ago, I learned a traditional coffee tiramisu from a French friend. The steps were pretty simple and the taste was really great. And last weekend, another friend of mine wanted to learn the traditional tiramisu again and I took the opportunity to make an another tiramisu in strawberry flavour. Strawberry tiramisu seems better for children as we know coffee is not healthy anyway. And now, I would like to share the recipe so that you can have your homemade tiramisu as well! Let's get started:
Ingredients:
750g of mascarpone cheese (Any brand will do)
7 eggs
Butter biscuit ( You may use fingers biscuit or plain sponge cake, I am using normal butter biscuit as shown above)
10 to 12 strawberries
10 to 12 tablespoon of sugar (To taste)
A pinch of salt

Steps:
1) Place the egg whites and egg yolks into two different bowls. Add a pinch of salt to the egg white and place it to the freezer.
2) Beat the egg yolks and mix with the mascarpone cheese. Add sugars and stir it till smooth. You may use a fork to do the step.
The final mixture will be as below.
3) Once the mixture is done, place it to the freezer and take out the egg whites from the freezer as well. Beat the egg whites till it is foam just like below.
4) Once the egg whites are ready, stir the egg whites and egg yolks together but remain the foam texture. (This is the tricky part)
The final result will be like below: Mousse
5) Place the mixture into freezer again. Cut the strawberries into pieces. The end part of the strawberries, blend it with sugar to get the juice.
6) Dip the biscuit into the juice until the biscuit is soft.
7) Place the soft biscuit over a pan.
8) Once the base fill with biscuits, cover the biscuits with a thin layer of mousse cheese.
9) When the mousse part is done, continue with step (6,7 and 8 again) to create the second layer.
10) Dry the strawberries using paper towel (Just press gently) and place it on top of the cake.
11) Final step, place the tiramisu at the freezer for 45 minutes and after that place it at the fridge. Leave the tiramisu overnite at the fridge for best result. Place it at freezer again for 10 minutes before serve.
